We are seeking an experienced and passionate Sous Chef to join our catering team on a full-time permanent basis.

* Permanent - Full Time, 38 hours per week position – shifts are Wednesday - Sunday.
* Located in East Maitland NSW at our beautifully redeveloped Green Hills Residential Care Service

Working closely with the Head Chef, you'll help oversee all catering operations, ensuring high‐quality, nutritious food and smooth service delivery for residents, staff, and visitors. With autonomy, accountability, and no night work, this role suits a capable kitchen leader ready to step up.

Your Contribution
* Lead and support day‐to‐day kitchen and catering operations alongside the Head Chef
* Independently manage weekend services, taking full accountability for people, service, and outcomes
* Supervise, guide, and mentor kitchen and catering staff, providing clear direction and feedback
* Oversee catering across meals service, café operations, private functions, household cooking activities, and events
* Step in as second in charge, leading the kitchen in the Head Chef's absence
* Prepare and deliver high‐quality, nutritious meals tailored to residents' dietary requirements
* Manage workflow, service timing, staffing, and competing priorities during busy periods
* Ensure compliance with Food Safety Standards, HACCP, and hygiene requirements
* Manage stock control, ordering, and FIFO rotation
* Foster a calm, positive, and accountable team culture focused on care, teamwork, and consistency
The Essentials
* Certificate III in Commercial Cookery (or equivalent)
* Experience as a Sous Chef, Chef de Partie, or Senior Chef in a commercial kitchen
* Proven ability to lead teams and manage services independently
* Strong working knowledge of food safety, HACCP, and catering compliance
* Experience in aged care, healthcare, or high‐volume catering (highly regarded)
* The ability to remain calm under pressure and manage multiple priorities
* Agenuine commitment to quality food, leadership, and accountability
* Food safety and compliance capability
* National Criminal History Check (or willingness to obtain)
