Spicers Hidden Vale are excited to announce the opportunity for a Junior Sous Chef to join our dedicated and passionate team at the award-winning Homage Restaurant due to internal promotions. As our Junior Sous Chef, you will be an integral part of bringing our famous relaxed luxury dining experience to life for our guests.
About Homage Restaurant
Set on 12,000 acres, just one hour from Brisbane and upon some of the most fertile farming soil in the Southern Hemisphere, Homage Restaurant has a real sense of place. With offerings from an outdoor coal pit, smokehouse, wood-fire and rotisserie. Sustainability is at the heart of everything we do - including sustainability of our people.
We have an 89-bed market garden, fermentation room, orchard, bee hives and free range farm onsite, meaning that much of the produce is from Spicers Hidden Vale itself and anything that’s not, is collected directly from nearby farms. It's the small things, like ‘family meal time’ before service, having the opportunity to work outside in the garden and interacting with our guests that make the difference.
The role and key duties
- Assist in leading the kitchen team to consistently provide a quality and profitable dining experience that is in line with the vision of the restaurant;
- Lead by example to ensure the overall guest experience exceeds expectations;
- Deliver all food experiences for the property including: restaurant dining; functions, weddings, events and experiential dining opportunities;
- Work closely with the Head Chef to ensure the overall success of your team and the retreat, including contributing to menu development, ensure compliance with health and safety regulations, and being responsible for assisting with the daily kitchen operation.
Essential criteria required to be considered
- Chef trade qualification (essential);
- Minimum 3 years experience as a CDP or Senior CDP in a high end and hatted restaurant environment;
- A commitment to assist in leading, training and developing a small team;
- An understanding of BOH operations including ordering, stock takes, rostering, menu planning and financials;
- Ability and willingness to commence work on a rotating roster including weekends and public holidays (essential);
- Located close to our restaurant with a reliable vehicle or a willingness to relocate.
