Restaurant Manager — Refined Bistro Dining (Eastern Suburbs, Sydney) 
Open Pantry Co is proud to be partnering with a celebrated Eastern Suburbs bistro to find a hands-on Restaurant Manager who leads on the floor, leads with warmth, and lifts standards service by service. 
Lead the floor. Shape the guest experience. Grow a much-loved dining room.

- Lead from the front: an on-the-floor leadership role—service pace, standards, and team energy are your signature 
What you'll do 
- Own the guest experience end-to-end: greet, seat, read the room, and keep service humming through peaks 
- Run service confidently (lunch & dinner), setting the pace, tone, and sequence for the team 
- Coach and develop a well-established FOH; recruit, onboard, and embed clear service standards 
- Build rosters and manage labour; support end-of-month tasks with the leadership team 
- Optimise reservations and floor flow with SevenRooms ; ensure accurate Jensen POS usage and reporting 
- Partner tightly with the kitchen on timing, specials, and menu communication so the room stays in flow 
What you'll bring 
- Proven Restaurant Manager (or senior ACM/AM ready to step up) in a premium bistro/brasserie or relaxed fine-dining 
- Confident wine knowledge and the ability to guide pairings without pretence 
- A genuine service presence —calm under pressure, clear on standards, warm with regulars 
- Strength in people leadership : training, feedback, setting culture 
- Solid rostering capability and comfort with SevenRooms (or similar) and Jensen POS (or similar) 
- Professional presentation, reliability, and pride in doing things properly 
- Values that fit: humility, respect, commitment
