Job Description
Laneway Seven in Ellenbrook, WA is looking for an experienced Chef to join their team. The in-house restaurant serves modern Australian cuisine with international influence. The role offers an annual salary of $80,000 plus superannuation.
Responsibilities
* Plan, direct, and supervise food preparation and cooking activities; determine presentation and create decorative food displays.
* Determine production schedules & staff requirements to ensure service delivery; estimate amounts and costs of required supplies and inspect supplies, equipment and work areas for conformance to established standards.
* Instruct cooks and other workers in preparation, cooking, garnishing and presentation of food; monitor sanitation practices; order or requisition food and other supplies to ensure efficient operation.
* Analyse recipes and assign prices to menu items based on food, labour and overhead costs; arrange for equipment purchases and repairs; negotiate prices and order supplies with sales representatives.
* Prepare and cook food of all types, including for special guests or functions; supervise and coordinate activities of cooks and workers engaged in food preparation; collaborate with other personnel to plan and develop recipes and menus, taking into account seasonal availability of ingredients and projected customer numbers.
* Check quality of raw and cooked food products, ensuring standards are met and received products meet quantity and quality requirements; demonstrate new cooking techniques and equipment to staff.
* Record production and operational data on specified forms.
Qualifications
* Relevant qualifications in cookery or hospitality.
* Minimum 18 months of professional experience as a Chef, including commercial kitchen cookery, menu planning and new dish development.
* At least 12 months of experience in dietary and nutritional planning, grilling over open fire and operating a commercial grill.
* Experience and knowledge in modern Australian cuisine is essential.
* Passion for great food and presentation; understanding and commitment to food safety.
* Experience in kitchen operations, managing a team, training kitchen staff and working well under pressure.
* Skills in goods ordering, menu costing, stock control and wastage minimization.
