CHEF DE PARTIE – Hamilton Island Golf Club / Dent Island

Hamilton Island is seeking a passionate and experienced Chef de Partie to join the talented culinary team at the Hamilton Island Golf Club, located on breathtaking Dent Island. Surrounded by sweeping ocean views and pristine greens, this is your opportunity to work in one of the most scenic and prestigious golf courses in the world.

Your Role

As Chef de Partie, you’ll manage a designated section of the kitchen while ensuring consistent quality and exceptional standards. You’ll contribute to daily service, menu planning, and the training of junior team members – all while helping to deliver a refined dining experience to golfers and guests alike.

Where You’ll Make an Impact

- Prepare and present dishes to the high standards expected of the Golf Club’s restaurant.
- Take responsibility for a section of the kitchen (grill, pastry, sauce, etc.).
- Maintain cleanliness, order, and safety within your section.
- Assist with menu development, prep, and event catering.
- Support the Head Chef and Sous Chef with training and team development.
- Ensure adherence to all food safety and hygiene regulations.

What We’re Looking For

You’re an organised, energetic, and passionate chef with strong technical skills and a love for refined cuisine. You take pride in consistency and quality, and enjoy working as part of a focused, friendly team.

To Be Successful, You Will Need:

- Certificate III in Commercial Cookery (Essential).
- Previous experience as a Chef de Partie or in a similar senior kitchen role.
- Strong organisational and communication skills.
- Valid Australian working rights (at least 6 months).
- A collaborative attitude and commitment to team success.
- Open Australian driver licence (manual essential for some roles).
- Willingness to stay current with culinary trends and seasonal offerings.
- Relevant experience in function or club dining (preferred).

Roster Highlights:

- Mostly lunch service hours with rare evening shifts (only for functions).
- Great work-life balance in a serene island setting.
