The iconic Margs Bakery is growing the team and on the hunt for a Head pastry chef
Margaret River Bakery are looking for a full time Head pastry chef to add to an already experienced team. The position is based on Margaret River main street. The job is very hands on and requires skills listed below. We are looking for a person who has an excellent work ethic and is reliable.
The applicant must have their own transport as the hours are early and public transport would not be an option. The role will be Monday – Friday 5am – 1pm. All food while on meal breaks is free of charge and you receive a 40% discount to use on counter food. This role is a managerial role ultimately responsible for the execution and delivery of all products from the pastry section. The systems and procedures are already implement but part of the role is to manage and update them for efficiency.
Reporting directly to our Production manager, Responsibilities consist of:
* Prepare a wide variety of sweet goods such as cakes, slices, pastries, bespoke cakes, Savory pies, etc. following traditional and modern recipes.
* Decorate pastries using different icings, toppings etc. to ensure the presentation will be beautiful and exciting.
* Assist in Creating new and exciting desserts/cakes to renew our menus and engage the interest of customers
* Check the quality of material and condition of equipment and devices used for cooking
* Monitor stocks for baking ingredients such as flour, sugar etc.
* Guide and motivate pastry assistants and bakers to work more efficiently
* Work with Pace and efficiency yourself when prepping items
* Roster the pastry team accordingly and manage holiday allocations
* Weekly ordering for the pastry team and stock management to a budget
* Maintain a lean and orderly cooking station and adhere to health and safety standards
* Forward planning to cover your own days off and holidays
Operational Tasks Include:
* Produce all baked goods yeasted goods, cakes, biscuits and pastry goods.
* including but not limited to artisan muffins, laminated Danish, croissants and doughnuts etc.
* Ensuring all raw ingredients are to MRB standards and fresh
* Check all preparation areas are clean to ensure compliance with occupational health and safety regulations
* Skilled hand writing on cakes, and able to do finishing of cakes which includes glazing buns and pastries, and decorating cakes with cream and icing
* Ability to knead, cut, mix, mould and shape dough and pastry goods
* Weigh and mix ingredients, knowledge of maturing procedures for mixes
* Prepare pastry and cake mixes
* Mix, mould and shape pastry dough.
* Load pastries and cakes into ovens, and unload cooked products.
* Control baking times and monitor the temperature and appearance of products
* Empty, clean and grease baking trays, tins and other cooking equipment

Experience
We request at least 3 years' experience but for the right person we can be flexible
Job specific requests:
1. Experienced Cake Decorator
2. 5 day week. Must be available Sat and/or Sun
3. Hours of work : Monday to Friday 5am – 1pm (Subject to change for holiday & sickness cover)
4. 38 hour week
5. Visa sponsorship available for suitable candidate.
