Organisational Context
The Canberra Racing Club (CRC) is the Principal Racing Authority for the ACT and is the controlling body in relation to thoroughbred racing in the ACT under the powers bestowed upon it under the Racing Act 1999. The Club is incorporated under the provisions of the Associations Incorporation Act 1991.
The Canberra Racing Club generally conducts twenty-five (25) race meetings each year including the Club's premier the Black Opal Stakes and Canberra Cup which are held in March. In addition to its excellent racing and training facilities, the club is also an entertainment facility, hosting varied functions and events.
The Club has commenced a major Precinct Development Program with the intention of generating significant future financial benefits and improved facilities, products and services. The Head Chef will report to the Head of Hospitality Operations and contribute to this strategic business development.
About the role
As Head Chef, you will be responsible for overseeing all aspects of kitchen operations, managing staff, and ensuring high-quality food preparation and presentation.
Reporting directly to the Head of Hospitality Operations this role will ensure the seamless execution of race days & events, maintaining high standards of customer service and operational efficiency.
This is a hands-on role & you will be responsible for balancing leadership with food ordering, food production, service delivery, menu development & staff training.
What you will be doing
* Kitchen Management – oversee all aspects of kitchen operations whilst upholding all safety standards and managing the kitchen efficiently
* Menu Development – create, design, and implement menus with a focus on local produce & meeting budget targets
* Staff Management – recruit, train, manage, mentor, and motivate your team including accurate rostering to meet budget targets
* Inventory Control – accurately forecast food requirements to ensure optimal quality whilst meeting demand, minimising waste & maintaining food safety standards
About you
* Minimum Certificate 3 in Commercial Cookery
* Proven experience (5+ years) in managing kitchen operations for large scale events, functions & conferences
* Proven experience in delivering exceptional customer experiences in the hospitality industry
* Experience in a leadership role within a fast paced, high-demand environment
* Understanding of hospitality industry standards and best practices,
* Understanding of health and safety regulations, licensing requirements, and risk assessments
* Proficient understanding of event management software (ie Ivvy) and IT systems
* Current Driver's Licence
