Your Responsibilities
* Together with our Executive Chef, assist in overseeing daily kitchen operations, ensuring efficient service and the consistent delivery of high-quality à la carte dishes.
* Uphold rigorous standards of food safety, hygiene and overall kitchen organisation.
* Collaborate with the culinary team to execute dishes with precision, efficiency and creativity under high-pressure conditions.
* Mentor and guide junior chefs, cooks and kitchen staff to foster skill development and team cohesion.
* Exemplify and promote Lua's culinary philosophy, culture and commitment to excellence.
What we are looking for:
* Highly organised - plan, prep and execute flawlessly in a fast-paced kitchen.
* Seafood cooking experience is a big plus.
* Calm under pressure, delivering top-quality dishes even during peak service.
* Previous experience leading and mentoring a team.
* Strong teamwork and communication—lead by example and support your team.
* Flexibility to work varied shifts, including evenings, weekends and public holidays.
