A respected, long-standing Ballarat steakhouse is seeking a Head Chef who is genuinely invested in building something long‑term. The ownership team is committed to continuous improvement and future growth opportunities, and they're looking for a Head Chef who wants to play a key role in that journey. The venue is known for premium cuts, classic technique, and a refined dining experience.
The Opportunity
This role goes beyond day‑to‑day kitchen operations. You'll partner closely with ownership and management, influencing menu development, operational improvements, and long‑term planning. You'll help shape the kitchen as the venue continues exploring new growth opportunities. You'll also lead all core kitchen operations, maintaining high standards across food quality, team development, financial performance, and kitchen systems.
Key Responsibilities
* Lead, mentor, and develop the kitchen team across hiring, training, and scheduling
* Maintain consistency across preparation, cooking, presentation, and portioning
* Uphold strict hygiene, food safety, and OH&S standards
* Manage inventory, ordering, stock rotation, and supplier relationships
* Monitor food and labour costs with regular reporting and margin analysis
* Standardise recipes and maintain consistency in plating and workflow
* Oversee kitchen organisation, equipment maintenance, and service flow
* Collaborate closely with front‑of‑house and ownership to support a cohesive dining experience and future operational improvements
* Butchery skills are highly regarded

* Experienced Head Chef or Senior Sous ready to take the next step
* Strong leadership presence with a calm, collaborative approach
* Background in premium dining or steakhouse operations
* High attention to detail and a commitment to consistency
* Solid understanding of kitchen financials and cost control
* Someone who is invested in the venue's long‑term success and wants to contribute to growth initiatives and continuous improvement
* A chef who takes pride in doing things properly: preparation, standards, organisation
