SKILLS
The role requires you to hold at least a relevant AQF (or equivalent) Diploma and at least 1 year of relevant work experience. At least three years of relevant experience may substitute for the formal qualification.
RESPONSIBILITIES
As a Chef, you will be responsible for planning, preparing, cooking and presenting high-quality dishes for functions, events and large-scale catering services. You will play an important role in menu planning and development, ensuring dishes are well balanced, cost effective and suitable for different events and client requirements.
The role involves coordinating kitchen activities during preparation and service to ensure meals are produced efficiently, consistently and to a high standard. You will ensure mise-en-place is properly prepared, assist in organising food production for events and maintain quality and presentation standards across all dishes.
You will also monitor stock levels, check food deliveries and ensure ingredients are stored correctly and rotated appropriately. Maintaining strict compliance with food safety and hygiene standards is essential. You will work closely with cooks, kitchen assistants and other staff to ensure the smooth operation of the kitchen and the timely preparation of meals.

TASKS
* Plan menus in consultation with management, considering seasonal availability, client requirements and cost factors
* Prepare, cook and present a wide range of dishes for weddings, private dinners, parties, conferences, corporate events and offsite catering services
* Estimate food and labour costs and assist in maintaining efficient kitchen operations and cost control
* Prepare and cook dishes using a variety of techniques including grilling, roasting, frying, steaming and baking, ensuring consistency in flavour and presentation
* Oversee mise-en-place preparation and coordinate kitchen activities to ensure efficient preparation and service
* Ensure food is prepared for both plated and buffet-style service, including portioning, packaging and labelling for offsite catering and event delivery
* Supervise and coordinate the activities of cooks and other kitchen staff during food preparation and service
* Monitor the quality of dishes at all stages of preparation and presentation to ensure high standards are maintained
* Inspect food deliveries and ensure ingredients meet quality standards and comply with food safety requirements
* Control and monitor stock levels, ensuring proper storage, stock rotation and minimal wastage
* Ensure kitchen equipment such as ovens, grills, fryers and mixers are used safely and maintained in good working order
* Maintain a clean, hygienic and well‐organised kitchen environment in accordance with food safety and occupational health regulations
* Ensure compliance with food safety, hygiene and allergen management procedures, including safe food handling and temperature control
* Train and support junior kitchen staff and apprentices, fostering a collaborative and professional kitchen environment
* Contribute to the development of new dishes and improvements to menus and kitchen procedures

SALARY
Annual salary of $75,000 - $85,000 based on experience.
