About The Lands by Capella Opening in February 2026, The Lands by Capella will be Sydney's most anticipated luxury events destination. Located within the beautifully restored Department of Lands building next to Capella Sydney, it will feature five architecturally striking venues that combine heritage character with modern sophistication. The Lands will host a wide range of prestigious gatherings including galas, weddings, conferences and cultural showcases. As part of the Capella family, colleagues will play a key role in launching this iconic new venue and delivering exceptional experiences that reflect Capella's commitment to excellence, creativity and hospitality at the highest level.

Position Summary As the Assistant Manager – Stewarding, you play a vital role in ensuring the seamless operation of the hotel's culinary and service teams by overseeing the cleanliness, hygiene, and organization of all kitchen and back‑of‑house areas. You will lead the stewarding team, ensuring compliance with luxury hotel standards, food safety regulations, and sustainability practices. In this hands‑on leadership role, you will manage daily operations, coordinate equipment and inventory control, and collaborate closely with the Culinary, Food & Beverage, and Events teams to support exceptional guest experiences.

The Role

* Plan the outlet's weekly roster and work schedule to ensure adequate staffing levels.
* Oversee and manage the daily operations of the department, ensuring all team members comply with service standards and policies.
* Establish guidelines for safe and cost‑effective use of chemicals.
* Conduct monthly inventory checks on all operating equipment and supplies.
* Ensure back‑of‑house cleaning schedules and garbage runs are strictly adhered to and areas are cleaned to established standards.
* Review and submit reports to chefs and the Food & Beverage Office.
* Attend and participate in the monthly Green Team meeting and drive communication, awareness and engagement on recycling initiatives.
* Handle all internal customer complaints and inquiries courteously and efficiently.
* Ensure waste is disposed of regularly in the correct manner.
* Monitor stewarding operations, especially during peak periods, and adjust as necessary.
* Control stock and par levels in all areas responsible to the Stewarding department.

Talent Profile

* General Education Certificate / Diploma.
* Experience in a similar role at luxury hotels or resorts.
* Knowledge of chemical and cleaning machinery is an advantage.
* Hands‑on approach and passion for delivering world‑class service behind the scenes.
* HACCP knowledge or Food Safety Program knowledge.
* Computer proficiency, including Microsoft Office Suite (Word, Excel).
* Familiarity with Canva for creating training materials is advantageous.
* Good command of written and spoken English.
* Valid working rights in Australia.
