Sous Chef

As a senior chef with a busy hotel, you will be second in charge providing support to the executive chef and leadership to the kitchen team.


Key Responsibilities:

* Develop and maintain standard recipe cards.
* Prepare detailed on-boarding programs for new staff members.
* Oversee the implementation of departmental standards and procedures.
* Conduct training needs analysis and implement relevant training programs.
* Manage probation and formal performance appraisals.
* Maintain up-to-date staff records and approve leave requests.
* Communicate effectively with staff and maintain good relations.
* Provide direction to the kitchen team including commis chefs, cooks, and kitchen attendants.
* Maintain a food safety program and ensure compliance with regulatory requirements.


Responsibilities:

* Coordinate daily activities with the stewarding department.
* Ensure equipment cleanliness and sanitation are maintained.
* Champion workplace health and safety policies and procedures.
* Facilitate the reporting and investigation of injuries and illnesses.
* Establish OHS representatives, first aid officers, and fire wardens.
* Provide resources and support to OHS committee representatives.
* Deliver induction and refresher training to staff.


Guest Experience:

* Lead by example in delivering positive guest experiences.
* Develop popular menus that meet IHG guidelines.
* Plan and execute successful Food and Beverage events.
* Supervise the preparation and presentation of food products.
* Monitor and control quality, presentation, and inventory levels.
* Communicate politely and display courtesy to guests and internal customers.
* Monitor local competitors and adjust kitchen operations accordingly.
* Set standards for all food and equipment purchases.

Requirements: A minimum of Certificate IV in Commercial Cookery or equivalent qualification. Over two years of chef experience or an equivalent combination of education and culinary experience. Current food safety certification and fluent English communication skills required.
